Being outside my home town, I miss quite a lot of authentic Kashmiri items which we do not get here.
One of them is Teilwur – Shaamich Chai te Teilwur – is still my all time favorite.
During the lockdown, I was inspired from many bakers to bake some snacks at home which let to an experimental baking of Koshur Kandur items – Teilwur and Katlam. They turned out so well, that now I am regularly baking them.

Ingredients –
1. 1 1/2 cups self raising flour & 1/2 cup of regular flour
2. 1/3 spoon salt
3. 4 tea spoons oil or Ghee or Unsalted Butter
4. 1 cup warm milk

Recipe –
1. Mix all the dry ingredients in a bowl.
2. To it add warm milk and knead, combining all the ingredients together and making it a soft sticky dough. Add warm water if needed.
3. Keep it to rest for 2 hours.
4. After 2 hours the dough should be doubled. Knead it a little and divide it in 6 – 8 portions (Depending on how big you want your katlam / teilwur to be).
5. Cover these portions with damp clothes and leave to rest for another 30 minutes.
6. Start rolling them in the form of Laccha Paratha or Warki Paratha.
7. Keep them on the Baking tray.
8. Brush with Milk as add Poppy seeds (Khash Khash)
9. Pre-Heat oven for 200 degrees
10. Bake at Convention for 25-30 minutes (till they get the color)
